GEORGE’S AT THE COVE NAMES FORMER 31THIRTYONE PASTRY CHEF ZACH SCHNEIDER AS ITS NEW PASTRY CHEF

Schneider served as 31Thirtyone Pastry Chef for more than a year before leaving during a transitional period for the North Park restaurant, which has since been re-named Deckman's North at 3131. MICHELIN-starred Chef Drew Deckman recommended Schneider to Foshee. George’s executive kitchen team now consists of Foshee, Executive Chef Masa Kojima, and Schneider.
Schneider, 27, began his culinary career in April 2022 as a Line Cook, Chef de Partie at PRESS Restaurant in Napa Valley after graduating from Gonzaga University. PRESS earned its first MICHELIN star in December of that year. Schneider returned home to San Diego in June 2023, and he worked as Line Cook at Kingfisher for a year before joining the 31Thirtyone team.
“Pastries have always been my passion and what I’m best at,” Schneider said. “I am grateful for the opportunity with Drew to serve in a lead role for the first time at 31Thirtyone and quite humbled that he vouched for me during Trey’s search for his new Pastry Chef. George’s at the Cove is a San Diego institution, and I look forward to contributing to its longstanding tradition of excellence.”
Schneider is a 2016 graduate of St. Augustine High School. After earning a Bachelor of Business Administration (BBA) degree and a Minor in Sustainable Business from Gonzaga in 2020, he went on to obtain an Accelerated Culinary Arts Program Certificate from The Culinary Institute of America.
“Zach is a welcome addition to our culinary team,” Foshee said. “His passion for his craft is clear to anyone who sees him work. Chef Masa and Chef Zach will help lead George’s during an exciting time for the restaurant.”
George’s is undergoing a major remodel of its rooftop Ocean Terrace, with an expected re-opening of mid- to late-January. The remodel includes a new floor, new tabletops, new glass wall, new umbrella plan, and new permanent heaters.
The restaurant’s Level2 dining room and bar is open during the project, offering lunch and dinner service, as well as the Little Luxuries menu from 2:00 – 5:00 p.m. seven days a week with specials on food and drinks. The covered, open-air Level2 provides a nearly identical view of the water as the Ocean Terrace.
George’s opened its doors at 1250 Prospect Street in downtown La Jolla on August 9, 1984. Foshee joined the restaurant’s leadership team shortly after receiving Food & Wine magazine’s Best New Chef honors in 1998 while at Robert Redford’s Sundance Resort in Utah.
Anna Adams had worked at George’s since 2015 as an intern while attending Art Institute of California – San Diego. She became a pastry cook in 2016, an assistant to then Pastry Chef Aly Lyng in 2019, Pastry Sous Chef in 2022, and Pastry Chef in June 2024.
